Annabelle's Raspberry Cake
Ingredients:

Cake
- 2 Cups White Flour
- 3/4 cups sugar
- 2 tsp baking soda
- 2 tsp baking powder
- 1 egg
- pinch of salt
- 1/2C lactose free milk
- 1 TBSP Vanilla Extract
- 1/2 C washed fresh raspberries
Icing
- 2.5 sticks (20 TBSP) butter
- 2.5 C powdered sugar
- 2 TBSP Vanilla Extract

Steps
- Preheat oven to 350 degrees F
- Mix together dry ingredients
- Add egg, milk, vanilla
- Mix thoroughly by hand with spatula
- Fold in berries
- Coat 10" and 6" springform with oil
- Pour into springform
- Bake for 45 minutes or until resembles banana bread
- Let cool on rack at least 30 minutes
Icing
- Whisk butter and sugar with stand mixer on medium speed 1/2 cup and a stick at a time
- Once mixed add vanilla
- Whip until desired stiffness
- Stack 6" cake on 10" cake and ice with icing.
